This is really tasty sliced with butter or even on its own.
One cup of cold tea.
One cup of sugar.
Two cups of Self Raising Flour.
One cup of Mixed Fruit.
1 tsp ground ginger.
1 tsp cinnamon.
1 tsp mixed spice.
1 egg.
Put Tea, sugar, fruit and spices in a mixing bowl. Mix together and if possible soak overnight. Next day add flour, beaten egg, Mix well together
Bake in a well greased tin, moderate oven for approx 1 hour.
Eat when cold. So simple yet so tasty, there is'nt even any fat in it, good for the waistline.
