A recipe fom Rochdale

Place two hands of nettles, a dozen roots of dandelions with some leaves, an ounce of bruised root ginger and two gallons of water into a large container and boil for an hour. Strain through a fine sieve and add a pound and a half of sugar. Stir to dissolve, then allow to cool. Dissolve two ounces of yeast in some sweetened lukewarm water and when frothy, strain, bottle and cork. This will be ready to drink after two days
