4oz butter or margarine
6oz sugar
2 eggs
2 big bananas
8oz self-raising flour

Mash the bananas. Cream the butter and sugar together then mix in the eggs. Add the bananas to the egg mix and then add the flour. Bake (in a loaf tin) on Gas Mark 4/180°C/350°F. I couldn't say how long for - the recipe quotes 40 minutes but while the cake looks cooked, the inside is not. I think yesterdays cake was in for an hour or so.

I only had 2 small bananas so I added some dead flies (currants) and glace cherries instead. I stirred them into the mashed banana before adding that to the egg mix.

It's a lovely cake, it just needs longer in the oven than the recipe stated. I turned the oven down after the 40 minutes so as not to burn the top.
