Here are a couple of Lanky receipes for tomorrow;

Lancashire Hotpot.

2oz. mushrooms
1 small onion
12oz. potatoes
1 sheeps kidney
1oz. lean bacon
3 lamb neck chops
Seasoning
Knob of butter or fat from chops.

Method.
Wash and halve the mushrooms.
Slice the onions and potatoes.
Skin, core and quarter the kidney. Dice the bacon.
Lay the cleaned chops on the base of a deep ovenproof dish.
Place a layer each of onions, kidneys, mushrooms, bacon and potatoes over the chops.
Season to taste.
Repeat the process to use all the ingredients, finishing off the hotpot with the potatoe slices overlapping and dot with knobs of butter or fat.
Add water to 2/3 fill the casserole dish.
Cover and bake at Gas 5, 375f for approx 2 hours. Remove the lid for the last 1/2 hour to brown the top potatoes.


Then for afters you can have a piece of;

Lancashire's Courting Cake.

9oz SR Flour
4 1/2oz butter
4oz sugar
1 egg
Milk to mix
Raspberry Jam

Method.

Sift flour and rub in butter lightly.
Stir in Sugar and beaten egg.
Mix with sufficient milk to make a floury dough.
Turn out onto a floured board and divide into two equal size pieces.
Roll into flat rounds.
Spread jam over one round, leaving a one inch margin round the edge.
Damp edge with water, place other round ontop, press edges together and sprinkle top with caster sugar.
Put cake on greased baking tin and bake in hot oven 400 deg F for about 20-30 mins.
Cool on a wire tray.

Have with a nice cup of Lancashire tea.

Can you have courting cake if you are married?

Might do the hotpot tomorrow night but without the kidney....we don't 'do' kidney.

I love kidney, and liver, never tried heart.
Will definitely try the Courting Cake.

When I started work 45 years ago, I was living in digs. The landlady had good standards but was sensibly economical, and stuffed heart (lambs', I think) was a regular dish - and very tasty too. I found the flavour nicer than kidney, not at all overpowering, more like any other meat, dense though not chewy. I think they were slowly cooked in a pot-roast or casserole. A "hearty" meal for a cold winter's day!
