8oz chocolate (I used Galaxy)
2 egg yolks
1 tbsp single cream
2 tsp rum
1 oz butter
1 oz seedless raisins
Chocolate vermicelli

Makes about 20.

Melt chocolate. Add the other ingredients except the vermicelli and stir well. Cover the bowl and chill in the fridge for about an hour until the mix is firm enough to handle. Roll mix into 20 balls. Spread vermicelli on greaseproof paper and roll choc balls in it.

They sound gorgeous Mel, I myself love Galaxy chocolate, would'nt the truffles make a nice Christmas gift. Gonna give them a go. :)

I made 21 yesterday, Gave mum and dad half in a nice little box....they are both diabetic!

It does take longer than the hour for the mixture to be manageable.

I have a mix chilling in the fridge now. I've made double the amount and bought a couple of giftbags. I'll put some in one for some friends of ours and the other I shall give to my postlady tomorrow. We are going to my in-laws tomorrow night for a family get together - finger food on the menu. I shall take some there for the table as my offering. The rest will get eaten by Lyndon!
He says they are the nicest chocs he has ever eaten and that if there is ever a block of galaxy in the fridge then it has to be used for truffles and not just for an indulgent evening in front of the TV as is usually the case.

A little something to go with the truffles:

Mulled Wine.

1.7L (3 pints) water.
225g (8oz) granulated sugar.
2-3 cinnamon sticks.
3 oranges.
10-12 cloves.
2 bottles red wine.
1 apple and orange to serve.

Roughly cut up the oranges and place in a saucepan with all the other ingredients, except for the red wine. Heat gently until the sugar has dissolved, then bring to the boil, simmer for 30 minutes, and strain. (The syrup can be made up to this stage and then stored in the fridge until required.)
To serve, return the syrup to the pan, bring to boiling point, add the wine and slice of apple and orange, and serve.

Serves 10-12.

I don't think I have ever had mulled wine. :?:

I'm not shopping now...far too busy in the stores...but maybe at the weekend I'll pop out for supplies and make this for when we have friends round.

For the past 5yrs we have been to Manchester Christmas market and we always have a glass of mulled wine. I'd never had it before then, but it is really warming and christmasy. You'd enjoy it Mel.

It's yummy.Picture the scene.......... at home, sat around a crackling log fire, lovely smell of cooking, snowing outside, surrounded by your loved ones, sipping mulled wine, bliss, not a care in the world.

Sounds idyllic. Not quite the same with the central heating going :?

Might save that for the trip to France at the end of January. We have a log fire there.

I should be. Lyndon has to go to Las Vegas for the International CES in early January unfortunately. This is why we are not going away for New Year this year. He returns on the 12th. My plan is to go to France on the 16th and return on (or just before) the 26th.
