HEAD CHEESE
Head cheese, also called souse and brawn, is a jellied loaf or sausage. Originally it was made entirely from the meaty parts of the head of a pig or calf, but now can include edible parts of the feet, tongue, and heart. The head is cleaned and simmered until the meat falls from the bones, and the liquid is a concentrated gelatinous broth. Strained, the meat is removed from the head, chopped, seasoned and returned to the broth and the whole placed in a mold and chilled until set, so it can be sliced.

It was definitely like brawn. My mother-in-law gave me some once, it made me retch. All that slimy jelly stuff. I'm pretty sure the one she had had cowheel in it.

You should always have a little test of everything, then if you don't like it, fair enough, but you just might like what you don't think you are going to. At least that is what I tell our grandaughter. :wink:

I will try things but not if there is jelly attached. I heave at the texture. I won't try oysters for that reason.

Sounds like we have similar tastes Maureen.
When I worked in an old folks home, we used to serve up brawn and tripe on a Friday teatime once a month. Even serving it up made me ill.

Now what can you not like about a nice piece of this Mel :D Apparently a cow has three stomachs and this platter has samples of all three, it looks quite disgusting. But with a nice drop of vinegar and salt who knows,it is probably quite tasty. :P

There is'nt a lot of taste to tripe, I think that is why you have to put loads of salt and vinegar on, but I like elder, that is quite nice, and black pudding, I love black puddings. First tried them as a girl on Burnley open market, there was a little man with a hump back selling just black puddings, you could have lean or fatty ones, always had fatty ones, with salt vinegar and mustard, they were delicious, probably lethal because of all the fat content, I only have lean ones now, then only occasionally. Yummy :wink: Stephanie.
