8oz figs
4oz brown sugar
2 eggs
4oz suet
6oz breadcrumbs
1 large tbs syrup

Chop the figs and beat the eggs. Combine all the ingredients and mix well. Put into a well buttered basin and cover with several layers of greaseproof paper. Steam for 3 hours. Serve with custard or white sauce.
These quantities make a large, family sized pudding but it can, of course, be made smaller.
Figs feature largely in the old recipes of this north-eastern area of Lancashire and they seem to have been especially popular in the Burnley district.

Mel, My Old Lancashire Recipes book has just arrived today, for £1-99 it is super, some nice old photo's in it too, thanks for putting me on to it. :wink:

The other one is very similar...recipes and pictures. Keep your eye open for it Stephanie. It's the same author and just called 'More Old Lancashire Recipes'.
