8 oz flour
4 oz sugar
4 oz lard
1 egg
2 heaped tsp baking powder
milk to mix

Mix together the dry ingredients, rub in the lard and bind with the beaten egg and enough milk to give a kneadable consistency. Roll out on a floured board to a thickness of 1" then place on a greased baking tray and bake at 350c, gas mark 4 until firm, approximately 15-20 minutes.

This plain cake was described as an 'oven slab cake' to be served cut into pieces and thickly buttered.

And if you mixed it with currants and rolled it out thinner, would it be "sad cake" ?

The recipe (from the same book) for 'Rossendale Sad Cake' uses water not milk, more lard or suet and much less sugar....as well as the optional currants

Sue, I had asked Glenys in a private message about the quote because I, too, think it's wonderful. The book is in the public library system here and I picked it up yesterday. Now I'm looking forward to a good read.
