8 oz flour 4 oz sugar 4 oz lard 1 egg 2 heaped tsp baking powder milk to mix Mix together the dry ingredients, rub in the lard and bind with the beaten egg and enough milk to give a kneadable consistency. Roll out on a floured board to a thickness of 1" then place on a greased baking tray and bake at 350c, gas mark 4 until firm, approximately 15-20 minutes. This plain cake was described as an 'oven slab cake' to be served cut into pieces and thickly buttered. |

And if you mixed it with currants and rolled it out thinner, would it be "sad cake" ? |

The recipe (from the same book) for 'Rossendale Sad Cake' uses water not milk, more lard or suet and much less sugar....as well as the optional currants |
