Post subject:  Rossendale Sad Cake

1lb plain flour
8oz fine suet or lard
2 oz sugar
pinch salt
5 fl oz cold water
currants (optional)

Rub the fat into flour and salt, add sugar, currants (if using), then mix into a workable pastry with cold water. Bake in a hot oven until golden. Serve hot an buttered.
