Post subject:  Matrimonial Cake. (The rough with the smooth)

4oz. Porridge Oats
3oz. Wholemeal Flour
2oz. Brown Sugar (dark)
3oz Butter

Filling. (make a little extra)
8oz. Stoned Dates
1Oz. Dark Brown Sugar
4fl. oz. Water


1. Start with the filling, chop dates and cook gently with the sugar and water until like a paste, soft but not sloppy. Leave to cool.
2. Mix oats, flour and sugar.
3. Put in butter until it is like a crumble mixture.
4. Put half of this mixture into a greased square tin. Pat down firmly.
5.Spread with date paste.
6. Cover with rest of crumble mixture and pat down gently.
7. Bake just above middle of a moderate/hot oven 180c for 15/20 mins until golden brown.
8. Cut into squares while still hot then leave to cool in the tin. Lift the slices out when cool.

Is this a bit like flapjack?

Suppose it is Mel, but I have never had flapjack.
